Niche is the functional role an organism has in an ecosystem. Its very broad term actually, specific component of niche of an organism helps it survive. It includes what it eats and what mechanisms it develops to protect itself from predators.

So it's logical to think that niche development increases with increased diversity of the ecosystem. Carnivores' niche is to feed on herbivores, so that all plants don't get eaten up. A balance in the ecosystem is maintained this way.
